INGREDIENTS
5 oz Chicken Breast
1 medium Sweet Potato
1 cup Mixed Greens
1 tsp Olive Oil
2 tbsp Lemon Juice
1 tbsp Fresh Herbs (Thyme & Rosemary)
1 clove Garlic
PREPARATION
Preheat the oven to 400°F.
In a small bowl, whisk together lemon juice, olive oil, minced garlic, and chopped fresh herbs.
Place the chicken breast on a baking sheet and brush it generously with the lemon-herb mixture. Season lightly with salt and pepper if desired.
Peel and cube the sweet potato into even pieces. Toss the cubes with a drizzle of olive oil, salt, pepper, and a squeeze of lemon juice.
Spread the sweet potato cubes on another baking sheet lined with parchment paper.
Place both the chicken and sweet potatoes in the oven. Roast the chicken for about 20-25 minutes or until cooked through and the sweet potatoes for about 25-30 minutes, tossing halfway through for even caramelization.
Once done, allow the chicken to rest for a few minutes before slicing.
Serve a portion of the roasted chicken alongside the sweet potatoes over a bed of fresh mixed greens. Drizzle any remaining lemon-herb dressing over the greens for added flavor.
