INGREDIENTS
400g Extra Firm Tofu
1 cup chopped Broccoli
1 medium Red Bell Pepper
1 medium Carrot
1 tbsp Low-Sodium Soy Sauce
1 tbsp Sesame Oil
1 tsp Sesame Seeds
1 tbsp Cornstarch
1 tsp Fresh Ginger (grated)
1 clove Garlic (minced)
PREPARATION
Press the tofu for at least 20 minutes to remove excess moisture. Once pressed, cut the tofu into 1-inch cubes.
In a bowl, gently toss the tofu cubes with 1 tablespoon of cornstarch, ensuring each piece is lightly coated.
Heat sesame oil in a large non-stick skillet over medium-high heat. Add the tofu cubes and fry until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add chopped broccoli, sliced red bell pepper, and sliced carrot to the skillet. Stir-fry the vegetables for 4-5 minutes until they are tender but still crisp.
Return the crispy tofu to the pan. Drizzle with low-sodium soy sauce and sprinkle sesame seeds over the top.
Gently toss everything together to combine flavors and heat through. Serve immediately and enjoy your balanced, flavorful meal.
