A delicious, wholesome dinner featuring tender oven-baked chicken meatballs paired with perfectly herb-roasted potatoes and crisp green beans. This balanced meal offers a satisfying mix of protein and veggies, finished with a subtle drizzle of olive oil and aromatic herbs.
INGREDIENTS
4 ounces Ground Chicken
1 medium Potato (≈100g)
1/2 cup Green Beans (≈50g)
1 teaspoon Olive Oil
1/2 large Egg
1 tablespoon Breadcrumbs
2 tablespoons Fresh Parsley
1 teaspoon Dried Oregano
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a mixing bowl, combine the ground chicken, beaten 1/2 egg, breadcrumbs, chopped fresh parsley, dried oregano, salt, and pepper. Mix well to form a uniform mixture.
Shape the chicken mixture into small meatballs, about 1 to 1.5 inches in diameter, and place them on one side of the baking sheet.
Wash and dice the potato into 1/2-inch cubes. In a bowl, toss the potato cubes with 1/2 teaspoon olive oil, salt, pepper, and a pinch of dried oregano.
Spread the potato cubes on the other side of the baking sheet. Add the green beans to the potato side and drizzle with the remaining olive oil, seasoning with salt and pepper.
Place the baking sheet in the oven and roast everything for 20-25 minutes, turning halfway through, until the meatballs are cooked through and the potatoes are tender and golden.
Remove from the oven and serve the meatballs alongside the herb-roasted potatoes and green beans.
