INGREDIENTS
40g Rolled Oats
4 large Egg Whites
15g Vanilla Whey Protein Powder
1/2 teaspoon Baking Powder
1/2 cup Nonfat Greek Yogurt
1/2 cup Mixed Berries
1 teaspoon Vanilla Extract
Pinch of Salt
PREPARATION
Place the rolled oats in a blender and blend until they form a fine oat flour.
In a mixing bowl, combine the oat flour, egg whites, vanilla whey protein powder, baking powder, vanilla extract, and a pinch of salt. Stir until the batter is smooth.
Preheat a non-stick skillet over medium heat. Lightly spray with cooking spray or use a small amount of oil if necessary.
Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges begin to set, about 2-3 minutes.
Flip the pancakes and cook for another 1-2 minutes until golden and cooked through.
Plate the pancakes and top with nonfat Greek yogurt and mixed berries.
Enjoy your protein-packed breakfast while it's warm!
