INGREDIENTS
7 oz Salmon Fillet
6 Asparagus Spears
1.5 cups Chopped Cauliflower
1 Garlic Clove
1 tsp Olive Oil (for mash)
0.5 tbsp Olive Oil (drizzle)
Salt & Black Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add a light drizzle of olive oil. Once hot, sear the salmon skin-side down for about 3-4 minutes until crispy, then flip and cook for another 3-4 minutes until just cooked through.
While the salmon cooks, steam the asparagus spears until tender-crisp, about 4-5 minutes.
In a small pot, combine the chopped cauliflower and a peeled garlic clove with enough water to cover. Bring to a boil and simmer until the cauliflower is fork-tender, about 8-10 minutes.
Drain the cauliflower and garlic then transfer them to a bowl. Add 1 teaspoon of olive oil, and mash until smooth. Adjust seasoning with salt and pepper.
Plate the salmon alongside the steamed asparagus and a serving of garlic cauliflower mash. Drizzle the extra olive oil over the salmon for added flavor and richness, and serve immediately.
