INGREDIENTS
8 oz Salmon Fillet
1 cup Green Beans
2 Garlic Cloves
1 tbsp Olive Oil (for mash)
1 tsp Olive Oil (for green beans)
1 cup Cauliflower Florets
2 tbsp Slivered Almonds
Salt and Pepper to taste
1 Lemon Wedge (optional)
PREPARATION
Pat the salmon filet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add a drizzle of olive oil and sear the salmon skin-side down for 4-5 minutes, then flip and cook for an additional 3-4 minutes until cooked through.
Meanwhile, in a separate pan, heat 1 tsp of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds before adding the green beans. Sauté the green beans for 4-5 minutes until they are tender-crisp and aromatic. Season with salt and pepper.
Steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl and mash with 1 tbsp olive oil, and season with salt and pepper until smooth.
Plate the cauliflower mash, top with seared salmon, and arrange the garlic green beans on the side. Sprinkle the slivered almonds over the green beans for a delightful crunch.
Finish with an optional squeeze of lemon over the salmon and serve immediately.
