INGREDIENTS
6 oz Lean Ground Turkey
1 large Egg
1/4 cup Whole Wheat Breadcrumbs
1 cup Broccoli, chopped
1 tsp Olive Oil
2 tbsp finely chopped Onion
2 cloves Garlic, minced
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat the oven to 375°F.
In a bowl, combine the lean ground turkey, beaten egg, whole wheat breadcrumbs, finely chopped onion, minced garlic, salt, and black pepper. Mix until all ingredients are well incorporated.
Form the mixture into a loaf shape on a lightly greased baking tray or in a small loaf pan.
Place the meatloaf in the preheated oven and bake for about 25-30 minutes, until cooked through.
While the meatloaf is baking, toss the chopped broccoli with olive oil, salt, and black pepper on a separate baking sheet.
Roast the broccoli in the oven (you can do this during the last 15 minutes of the meatloaf baking) at 375°F for about 15 minutes, until edges are crispy.
Once both the meatloaf and broccoli are done, remove from the oven. Let the meatloaf rest for a few minutes before slicing.
Serve a slice of meatloaf alongside a portion of crispy roasted broccoli.
