INGREDIENTS
5 oz Salmon Fillet (142g)
2/3 cup Cooked Quinoa (122g)
1 cup Green Beans (125g)
1 tsp Olive Oil (5g)
1 Garlic Clove
1 Lemon Wedge
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil.
Place the salmon fillet skin-side down in the skillet and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3-4 minutes until the fish is just cooked through. Remove and set aside, keeping it warm.
In the same skillet, add the minced garlic and sauté briefly until fragrant, then add the green beans. Stir-fry for about 4-5 minutes until tender-crisp.
Warm the pre-cooked quinoa gently in a small pot or microwave if needed.
Plate the quinoa as a base, arrange the seared salmon on top, and add the garlic green beans on the side.
Squeeze a lemon wedge over the salmon and beans to finish, and serve immediately.
