This harmonious blend offers delightful textures and a balanced burst of flavors that is both satisfying and energizing.
INGREDIENTS
300g Extra-Firm Tofu
100g Shelled Edamame
100g Avocado
100g Cucumber
1 tbsp Cornstarch
1/2 tbsp Olive Oil
Salt & Pepper to taste
PREPARATION
Press the tofu to remove excess moisture and then cut it into bite-sized cubes. Sprinkle with salt and pepper.
Lightly dust the tofu cubes with cornstarch to create a crispy coating.
Heat 1/2 tablespoon of olive oil in a non-stick skillet over medium-high heat. Add the tofu cubes and pan-sear them until all sides turn golden and crispy, about 3-4 minutes per side.
While the tofu is cooking, prepare the salad by dicing the avocado and slicing the cucumber. In a bowl, combine the avocado, cucumber, and shelled edamame.
Lightly season the salad with salt and pepper. If desired, a squeeze of lemon can be added for a fresh zing.
Plate the crispy tofu alongside a generous serving of the fresh avocado cucumber salad, and serve immediately.
