INGREDIENTS
6 ounces Salmon Fillet
1 cup Broccoli
1 cup Cauliflower
1 clove Garlic
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Toss the broccoli with a light drizzle of olive oil, salt, and pepper, then spread evenly on a baking sheet. Roast in the preheated oven for about 15-20 minutes until tender and slightly browned.
While the broccoli roasts, prepare the cauliflower mash. Steam the cauliflower florets until very tender, about 10 minutes, along with the garlic clove.
Once steamed, transfer the cauliflower and garlic to a blender or food processor. Add a teaspoon of olive oil, and season with salt and pepper. Blend until smooth and creamy.
Season the salmon fillet with salt and pepper. Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon, skin-side down first if applicable, for about 3-4 minutes per side until cooked through and nicely browned.
Plate the seared salmon alongside the roasted broccoli and a generous serving of garlic cauliflower mash. Serve immediately and enjoy!
