INGREDIENTS
4 oz Salmon Fillet
1 cup Brussels Sprouts
1 tsp Extra Virgin Olive Oil (for mash)
1 cup Cauliflower
0.5 cup Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil (for roasting)
Salt & Pepper to taste
Garlic Powder to taste
PREPARATION
Preheat your oven to 400°F.
Trim and halve the Brussels sprouts, then toss them with 1 teaspoon of olive oil, salt, pepper, and a pinch of garlic powder. Arrange on a baking sheet.
Roast the Brussels sprouts for about 20 minutes until tender and slightly caramelized, stirring halfway through.
Season the salmon fillet with salt, pepper, and a light sprinkle of garlic powder.
Heat a non-stick skillet over medium-high heat and sear the salmon, skin-side down if applicable, for about 3-4 minutes per side or until the interior reaches your desired doneness.
Steam the cauliflower until very tender, approximately 8-10 minutes.
Transfer steamed cauliflower to a bowl and add 0.5 cup of nonfat Greek yogurt along with 1 teaspoon of olive oil, salt, and pepper. Mash until smooth and creamy.
Plate the seared salmon alongside the roasted Brussels sprouts and a generous serving of cauliflower mash. Serve immediately.
