INGREDIENTS
4 oz Chicken Breast
1/4 cup Whole Wheat Flour
1 large Egg
2 Tbsp Fresh Mixed Herbs (Parsley & Dill)
1 tsp Olive Oil
1 cup Baby Spinach
1 serving (50g) Cherry Tomatoes
Salt and Pepper to taste
1 cup Water
PREPARATION
Season the chicken breast with salt and pepper. In a small pot, add the chicken and cover with water. Bring to a gentle simmer and poach until fully cooked (about 12-15 minutes). Remove the chicken, let it cool, then shred into bite-sized pieces.
In a bowl, combine the whole wheat flour, egg, chopped mixed herbs, a pinch of salt and pepper, and a couple of tablespoons of water if needed. Stir to form a smooth, thick dumpling batter.
Bring 1 cup of water to a simmer in a medium saucepan. Drop spoonfuls of the dumpling batter into the simmering water. Cover and let the dumplings cook for about 8-10 minutes until they are set and float to the surface.
Gently fold the shredded chicken into the dumplings, warming everything through for an additional 2 minutes. Adjust seasoning if needed.
Plate the herb dumplings and chicken mixture. Drizzle with olive oil over the dish.
Serve alongside a fresh side salad made with baby spinach and halved cherry tomatoes.
