INGREDIENTS
6 oz Salmon Fillet
1 cup steamed Broccoli
1 cup Cauliflower
1 Garlic Clove
1/4 cup Nonfat Greek Yogurt
2 tsp Olive Oil
Salt and Black Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides lightly with salt and black pepper.
Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon, skin-side down if applicable, and sear for about 3-4 minutes per side or until the desired doneness is achieved.
While the salmon cooks, steam the broccoli until tender yet still vibrant, about 5-6 minutes.
For the cauliflower mash, chop the cauliflower into florets and steam along with a garlic clove until very soft, roughly 8-10 minutes.
Transfer the steamed cauliflower and garlic to a blender or use a potato masher and add the nonfat Greek yogurt along with the remaining 1 tsp olive oil. Blend or mash until smooth. Season with a pinch of salt and pepper to taste.
Plate the seared salmon with a side of steamed broccoli and a generous serving of garlic cauliflower mash. Serve immediately.
