INGREDIENTS
300g Egg Tofu
50g Shelled Edamame
40g Baby Spinach
60g Baby Bok Choy
1 Garlic Clove
1 tbsp Cornstarch
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Toasted Sesame Seeds
Salt and Pepper to taste
PREPARATION
Drain the tofu and gently pat dry with paper towels. Cut the tofu into 1/2-inch thick slices or cubes.
Place the tofu pieces in a bowl and sprinkle with salt, pepper, and cornstarch. Toss gently until evenly coated.
Heat a non-stick skillet over medium-high heat and add the tofu. Allow it to sear for about 3-4 minutes on each side until all sides are crispy and golden brown. Remove tofu and set aside.
In the same skillet, lower the heat to medium, add the sesame oil and finely minced garlic. Sauté until fragrant, about 30 seconds.
Add the baby bok choy and baby spinach to the skillet. Stir-fry for 2-3 minutes until the greens begin to wilt but still retain their bright color.
Stir in the low-sodium soy sauce and quickly toss the shelled edamame. Allow the flavors to meld for another 1-2 minutes.
Plate the seasoned greens and top with the crispy tofu pieces. Garnish with toasted sesame seeds and serve immediately.
