Enjoy a deliciously crispy chicken bite with a tangy-sweet glaze complemented by perfectly roasted broccoli. This dish features tender chicken coated in almond flour for an extra crunch, lightly crisped in egg white, and finished with a drizzle of honey, soy sauce, and sriracha glaze. The roasted broccoli adds a vibrant, nutritious crunch to balance the flavors.
INGREDIENTS
5 oz Chicken Breast
1/4 cup Almond Flour
1 large Egg White
1 tbsp Honey
1 tbsp Low Sodium Soy Sauce
1 tsp Sriracha
1 cup Broccoli
1 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Cut the chicken breast into bite-sized pieces. Season with salt, pepper, and garlic powder.
In a bowl, mix the almond flour. In a separate bowl, lightly beat the egg white.
Dip each chicken piece into the egg white, then coat evenly with the almond flour mixture.
Place the coated chicken bites on a baking sheet lined with parchment paper.
Bake the chicken in the preheated oven for 15-18 minutes or until golden and crispy.
While the chicken bakes, prepare the glaze by whisking together honey, low sodium soy sauce, and sriracha in a small bowl.
Toss the broccoli with a little salt, pepper, and a drizzle of olive oil if desired, then spread on another baking sheet.
Roast the broccoli in the oven for the last 10 minutes of the chicken’s baking time, until crisp-tender.
Once both the chicken and broccoli are done, drizzle the sweet and spicy glaze over the chicken bites.
Serve the glazed crispy chicken bites alongside the roasted broccoli and enjoy!
