INGREDIENTS
6 oz Salmon Fillet (170g)
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
1 tsp Olive Oil (4.2g)
2 cloves Garlic (6g)
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
In a skillet over medium-high heat, add half the olive oil. Once hot, add the salmon skin-side down (if applicable) and sear for about 3-4 minutes, then flip and cook an additional 2-3 minutes until cooked through. Remove from the skillet and set aside.
While the salmon cooks, steam the green beans until tender-crisp, about 4-5 minutes.
In another pan, warm the remaining olive oil over medium heat, add the minced garlic and sauté briefly until fragrant. Add the steamed green beans and toss to coat evenly.
For the cauliflower mash, steam the cauliflower until tender (about 8-10 minutes). Transfer to a bowl and mash using a fork or immersion blender. Season lightly with salt, pepper, and a drizzle of olive oil if desired.
Plate the salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve warm.
