INGREDIENTS
5 oz Lean Ground Turkey
1 cup Whole Wheat Spaghetti (cooked)
1 medium Fresh Tomato
1/4 medium Yellow Onion
2 Garlic Cloves
1 tsp Olive Oil
2 tbsp Fresh Basil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine the lean ground turkey with finely chopped onion (reserve the remaining pieces for the sauce if you wish), minced garlic, a pinch of salt, and pepper. Form the mixture into small meatballs.
Place the meatballs on a parchment-lined baking sheet and bake for 15-18 minutes, or until cooked through.
While the meatballs are baking, bring a pot of water to a boil and cook the whole wheat spaghetti according to the package instructions until al dente. Drain and set aside.
For the fresh tomato sauce, chop the tomato and combine with a teaspoon of olive oil in a small saucepan. Warm over medium heat for 5 minutes to meld the flavors. Add fresh basil, salt, and pepper to taste.
Combine the cooked spaghetti with the warm tomato sauce and gently toss. Serve the turkey meatballs on top of the spaghetti.
Garnish with additional fresh basil if desired and enjoy the hearty, balanced meal.
