INGREDIENTS
4 oz Salmon Fillet
1 cup Green Beans
1/2 cup Brown Rice, cooked
2 tbsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 4 minutes.
Carefully flip the salmon and cook for an additional 3-4 minutes until the fish is just cooked through. Remove the salmon from the skillet and cover to keep warm.
In the same skillet, lower the heat to medium and add the remaining tablespoon of olive oil. Sauté minced garlic until fragrant, about 30 seconds.
Add green beans to the skillet, tossing to coat in garlic and olive oil. Sauté for 4-5 minutes until the beans are bright green and tender-crisp.
Warm the cooked brown rice if needed, then plate by placing the rice on one side. Add the garlic green beans alongside the rice.
Place the seared salmon on top or next to the greens, drizzle with fresh lemon juice, and serve while hot.
