Preheat your oven to 375°F (190°C).
In a medium bowl, combine the lean ground turkey, egg, rolled oats, chopped onion, minced garlic, and a pinch each of salt, pepper, and thyme. Mix until just combined, being careful not to overwork the meat.
Shape the mixture into a small loaf and place it on a parchment-lined baking sheet or in a small loaf pan.
Place the turkey meatloaf in the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
While the meatloaf is baking, toss the broccoli florets with a little bit of olive oil, salt, and pepper. Spread them out on another baking sheet.
Roast the broccoli in the oven (you can put them in during the last 15 minutes of the meatloaf’s baking time) until tender and slightly crisp, about 15 minutes.
