Cheesy Vegetable-Stuffed Tortilla Bake with Ground Beef
A comforting, oven-baked meal where seasoned ground beef meets a medley of colorful vegetables, tucked inside a whole wheat tortilla and topped with a blend of melted cheddar and a light layer of lowfat cottage cheese. A touch of egg white adds a subtle lift while keeping the dish balanced and nourishing.
INGREDIENTS
4 oz Ground Beef (93% lean)
1/3 cup Lowfat Cottage Cheese
1 Whole Wheat Tortilla
2 tbsp Shredded Cheddar Cheese
1 large Egg White
1 cup Mixed Vegetables (bell peppers, zucchini, onion)
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat the oven to 375°F.
In a non-stick skillet, heat olive oil over medium heat. Add the mixed vegetables, sautéing for about 3-4 minutes until they are slightly tender but still crisp. Season with a pinch of salt and pepper.
Push the vegetables to the side and add the ground beef to the skillet. Cook the beef until it is browned and fully cooked through, breaking it up with a spatula as it cooks. Mix the beef with the vegetables once done.
Remove the skillet from heat and stir in the egg white until well combined. This will help in binding the mixture slightly.
Lay out the whole wheat tortilla on a baking dish. Spread the ground beef and vegetable mixture evenly over the tortilla.
Top the mixture by dolloping the lowfat cottage cheese over it, then sprinkle the shredded cheddar cheese evenly on top.
Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
Remove from the oven, let it cool for a couple of minutes, then slice and serve warm.
