INGREDIENTS
6 oz Cod Fillet
1 medium Sweet Potato
1 tsp Extra Virgin Olive Oil
1/2 whole Lemon
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Peel (if desired) and cut the sweet potato into 1/2-inch cubes. Toss them with half a teaspoon of olive oil, a pinch of salt, and a pinch of black pepper on a baking sheet.
Roast the sweet potatoes in the preheated oven for about 25-30 minutes, stirring halfway through, until they are crispy on the outside and tender inside.
While the sweet potatoes are roasting, place the cod fillet on a lightly oiled baking tray.
Drizzle the cod with the remaining olive oil and squeeze the juice of half a lemon over it. Sprinkle the fresh rosemary, fresh thyme, and a pinch of salt and black pepper over the fish.
Place the cod in the oven during the last 12-15 minutes of the sweet potatoes' cooking time. Bake until the fish is opaque and flakes easily with a fork.
Plate the cod alongside a generous serving of crispy roasted sweet potatoes. Optionally garnish with extra lemon wedges or fresh herbs before serving.
