INGREDIENTS
6 oz Pork Tenderloin (~170g)
1 Tbsp BBQ Sauce
1 cup Shredded Cabbage
1/4 cup Shredded Carrot
2 Tbsp Plain Nonfat Greek Yogurt
1 tsp Apple Cider Vinegar
Salt & Pepper to taste
PREPARATION
Preheat your oven to 300°F. Season the pork tenderloin with salt and pepper, then sear it in a hot skillet over medium-high heat for about 2 minutes per side until nicely browned.
Transfer the pork to a baking dish. Brush it generously with BBQ sauce, cover with foil, and roast in the oven for 1.5 to 2 hours until the meat is tender and easily shredded.
Once cooked, remove the pork from the oven and let it rest for a few minutes before shredding with two forks.
In a bowl, combine the shredded cabbage and carrot. In a small bowl, whisk together Greek yogurt, apple cider vinegar, a pinch of salt and pepper; drizzle over the slaw and toss to coat evenly.
Serve the pulled pork atop a bed of crispy slaw. Drizzle with an extra touch of BBQ sauce if desired for added flavor.
