INGREDIENTS
250g Firm Tofu
77g Shelled Edamame (about 1/2 cup)
1 medium Red Bell Pepper
1 cup Broccoli Florets
1 medium Carrot
1 tbsp Sesame Seeds
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Oil
2 cloves Garlic
1 tbsp Cornstarch
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a bowl, toss the tofu cubes with cornstarch until evenly coated.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat. Add minced garlic and sauté until fragrant.
Add the tofu and stir-fry until all sides turn golden and crispy, about 6-8 minutes.
While tofu is cooking, slice the red bell pepper, cut broccoli into florets, and julienne the carrot.
Add the vegetables to the skillet and stir-fry with the tofu for about 4-5 minutes, until they are crisp-tender.
Stir in the shelled edamame and drizzle with low-sodium soy sauce. Toss to combine and warm through for another 1-2 minutes.
Remove from heat and garnish with toasted sesame seeds before serving.
