INGREDIENTS
175g Tempeh
100g Broccoli
100g Red Bell Pepper
50g Carrot
1 Tbsp Maple Syrup
1 Tbsp Soy Sauce
1 Tsp Olive Oil
2 cloves Garlic
1 Tsp Fresh Ginger
PREPARATION
Drain and cut the tempeh into bite-sized cubes.
Prepare vegetables by cutting broccoli into florets, slicing the red bell pepper, and julienning the carrot. Mince the garlic and grate the ginger.
In a small bowl, whisk together maple syrup, soy sauce, minced garlic, and grated ginger to create the glaze.
Heat olive oil in a large non-stick skillet or wok over medium heat. Add the tempeh cubes and stir-fry for about 3-4 minutes until lightly golden.
Add the broccoli, red bell pepper, and carrot to the skillet. Stir-fry for another 4-5 minutes until vegetables are crisp-tender.
Pour the maple-soy glaze over the tempeh and vegetables. Stir well to coat evenly and cook for an additional 2 minutes, allowing the flavors to meld.
Taste and adjust seasoning if necessary. Serve immediately, enjoying the mix of sweet, savory, and tangy flavors of the dish.
