INGREDIENTS
4 oz Ground Turkey
1 cup Diced Butternut Squash
1 Large Egg
1/2 medium Red Onion, diced
1 tsp Olive Oil
5 Fresh Sage Leaves
Salt & Black Pepper to taste
PREPARATION
Heat the olive oil in a large skillet over medium heat.
Add diced red onion and sauté until translucent, about 2-3 minutes.
Stir in the diced butternut squash and continue to cook for about 5 minutes until it starts to soften.
Add the ground turkey to the skillet, breaking it apart with a spatula. Season with salt and black pepper, and let it cook until browned and cooked through, approximately 6-8 minutes.
When the hash is nearly done, push the mixture to the side of the skillet and crack the egg into the cleared space. Cook to your desired doneness, or scramble gently and mix with the hash.
In a small separate pan, heat a few drops of olive oil and lightly fry the fresh sage leaves until crispy, about 30 seconds per side. Drain on a paper towel.
Top the hash with the crispy sage leaves and serve warm.
