INGREDIENTS
6 oz Sirloin Steak
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil (for green beans)
1 tsp Extra Virgin Olive Oil (additional for green beans)
1 cup Cauliflower
2 tbsp Unsalted Butter
1 clove Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Bring the sirloin steak to room temperature. Season both sides generously with salt and pepper.
Heat a heavy skillet over medium-high heat. Once hot, add the steak and sear for 3-4 minutes on each side for medium-rare, or adjust times based on your preferred doneness. Remove the steak and let it rest.
While the steak rests, blanch the green beans in boiling water for 2-3 minutes until just tender, then drain.
In another pan, heat 1 tsp of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Toss the blanched green beans in the garlic oil, then drizzle with an additional 1 tsp of olive oil. Season with salt and pepper to taste.
Steam the cauliflower until very tender, about 8-10 minutes. Transfer to a bowl and mash with 2 tablespoons of unsalted butter until smooth. Add salt and pepper to taste.
Slice the rested steak against the grain, and plate alongside the garlic green beans and mashed cauliflower. Serve immediately.
