PREPARATION
Pat the salmon fillet and shrimp dry with a paper towel and season both with salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the sesame oil. Once the oil is shimmering, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
Place the salmon fillet in the skillet, skin side down if applicable, and sear for about 3-4 minutes per side until a golden crust forms and the salmon is nearly cooked through.
Add the shrimp to the skillet and cook for about 2 minutes per side until opaque and fully cooked.
While the seafood is cooking, in a separate bowl, toss the baby spinach with a light drizzle of any remaining sesame oil and a pinch of salt.
