Savor tender, crispy chicken tenderloins infused with bright lemon zest and aromatic herbs, paired with roasted broccoli drizzled with olive oil. This dish effortlessly blends a crispy exterior and juicy interior with the satisfying crunch of perfectly roasted veggies.
INGREDIENTS
8 oz Chicken Tenderloins
1 tbsp Olive Oil
1 cup Broccoli
1 Lemon
2 cloves Garlic
1 tsp Fresh Thyme
1 tsp Fresh Parsley
Salt & Pepper
PREPARATION
Preheat the oven to 400°F.
Cut the broccoli into florets and toss with half of the olive oil (approximately 1/2 tbsp), salt, and pepper. Arrange on a baking sheet and roast in the oven for 15 minutes until tender and slightly crispy.
While the broccoli roasts, pat the chicken tenderloins dry. Season them with salt, pepper, and the zest of the lemon. Finely mince the garlic and chop the thyme and parsley.
Heat the remaining olive oil in a skillet over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
Add the chicken tenderloins to the skillet. Pan-sear for about 3-4 minutes per side until the exterior is crispy and the internal temperature reaches 165°F.
Once cooked, squeeze the juice of the lemon over the chicken and sprinkle with chopped thyme and parsley.
Plate the chicken tenderloins alongside the roasted broccoli. Serve immediately.
