PREPARATION
Crumble the silken tofu into a bowl until it reaches a scrambled texture.
Rinse and drain the chickpeas and gently mash them slightly with a fork, leaving some whole for texture.
Thinly slice the red onion and roughly chop the fresh spinach.
Heat a non-stick skillet over medium heat and add the olive oil. Sauté the red onion until softened and translucent.
