INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 tbsp Low-Fat Greek Yogurt
1 tsp Olive Oil
2 cloves Garlic
2 tbsp Fresh Herbs (Parsley & Dill)
Salt and Pepper (to taste)
PREPARATION
Pat the salmon dry, season with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon skin-side down for about 4-5 minutes, then flip and cook the other side for another 3-4 minutes until just cooked through.
While the salmon cooks, trim the green beans and blanch them in boiling water for 2-3 minutes until they are crisp-tender. Drain and set aside.
In a small pan, heat the olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Toss the blanched green beans in the garlic oil, season with salt and pepper.
Steam the cauliflower florets until tender, about 8 minutes. Transfer to a bowl and add the low-fat Greek yogurt along with finely chopped fresh herbs. Mash lightly with a fork to combine while retaining some texture.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of herb mashed cauliflower. Garnish with extra herbs if desired and serve immediately.
