100g Sweet Potato
100g Asparagus
1 clove Garlic
1 tsp Olive Oil

PREPARATION
Preheat your oven to 400°F (200°C).
Peel and cube the sweet potato into 1-inch pieces. Trim the asparagus ends.
In a bowl, toss the sweet potato and asparagus with olive oil, a pinch of salt, and pepper.
Spread the sweet potato on a baking sheet and roast for about 20-25 minutes until tender. Add the asparagus during the last 10 minutes of roasting.
While the vegetables roast, pat dry the beef steak. Season both sides with salt and pepper.
Heat a skillet over medium-high heat. Add a little olive oil if desired and sear the beef for about 3-4 minutes per side for medium-rare, adding the minced garlic and fresh herbs in the last minute of cooking.
