INGREDIENTS
5 oz Lean Ground Beef (85% lean)
1/2 medium Sweet Potato (cubed)
1/4 cup diced Red Onion
1 clove Garlic, minced
1 tsp Olive Oil
1 tbsp Fresh Herbs (Thyme & Rosemary), chopped
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Peel (if desired) and cut the sweet potato into small cubes. Toss with half of the olive oil, a pinch of salt, and pepper. Spread them on a baking sheet.
Roast the sweet potato cubes in the oven for about 20-25 minutes, until tender and lightly caramelized.
While the sweet potatoes are roasting, heat the remaining olive oil in a large skillet over medium heat.
Add the diced red onion and minced garlic to the skillet. Sauté until the onion becomes translucent and garlic is fragrant, about 2-3 minutes.
Add the lean ground beef to the skillet, breaking it apart as it cooks. Season with salt, pepper, and the chopped fresh herbs.
Cook the beef until it is browned and cooked through, approximately 6-8 minutes.
Once the sweet potatoes are done, add them to the skillet. Gently toss everything together to combine the flavors.
Taste and adjust seasoning if necessary. Serve warm and enjoy your balanced, nutrient-rich meal.
