INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
200 g Cauliflower
1/2 cup Plain Nonfat Greek Yogurt
2 tsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat and add 1 tsp of olive oil.
Season the salmon fillet with salt and pepper on both sides.
Place the salmon in the skillet skin-side down and sear for about 4 minutes, then flip and cook for another 3-4 minutes until cooked through.
While the salmon cooks, steam the asparagus until tender, about 4-5 minutes.
Meanwhile, chop the cauliflower florets and steam or boil them until soft, approximately 8-10 minutes.
In a small pan, heat the remaining 1 tsp olive oil and lightly sauté the minced garlic for about 30 seconds until fragrant.
Transfer the cooked cauliflower to a bowl, add the sautéed garlic and nonfat Greek yogurt, and mash until smooth; season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic cauliflower mash, and serve immediately.
