150g Sweet Potato

PREPARATION
Peel and cube the sweet potato, then boil in a pot of salted water until tender, about 12 to 15 minutes.
While the potatoes boil, pat the salmon fillet dry and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crisp and the flesh is flaky.
Remove the salmon from the pan and set aside; add the remaining oil to the same skillet.
Sauté the green beans and minced garlic in the skillet for 5 to 7 minutes until the beans are tender-crisp and aromatic.
