Seared Salmon with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon served over fluffy sweet potato mash with a side of crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 ounces Wild Atlantic Salmon
130 grams Sweet Potato, peeled and cubed
100 grams Fresh Green Beans, trimmed
1 teaspoon Extra Virgin Olive Oil
0.5 teaspoon Ghee
Pinch of Sea Salt and Black Pepper
1 Lemon Wedge
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook until fork-tender, about 10-12 minutes.
While potatoes cook, place green beans in a steamer basket over simmering water and steam for 5-7 minutes until they are crisp-tender and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the skillet and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 2-3 minutes until cooked through to your preference.
Drain the sweet potatoes and mash them thoroughly with the ghee and a pinch of salt until fluffy.
Plate the sweet potato mash, top with the seared salmon, and serve the steamed green beans on the side with a fresh squeeze of lemon juice.
