Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served with creamy cauliflower mash and garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Green Beans
1.5 tsp Extra Virgin Olive Oil
1 tbsp Nutritional Yeast
2 cloves Garlic, minced
Pinch of Sea Salt and Black Pepper
1/2 Lemon, for juicing
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, heat 0.5 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until golden and cooked through.
In a separate small pan, heat the remaining 1 teaspoon of olive oil and sauté the green beans with minced garlic for 5-7 minutes until tender-crisp.
Drain the steamed cauliflower and transfer to a blender or food processor with the nutritional yeast and a pinch of salt; process until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
Finish the dish with a fresh squeeze of lemon juice over the salmon.
