PREPARATION
In a small mixing bowl, combine the non-fat Greek yogurt and the vanilla protein powder.
Whisk the mixture vigorously until the protein powder is fully incorporated and the yogurt is smooth.
In a tall glass or mason jar, spoon in half of the protein-yogurt mixture to form the base layer.
Add half of the mixed berries on top of the yogurt layer.
Repeat with the remaining yogurt mixture and then the remaining berries.
Finish the parfait by sprinkling the chopped walnuts and chia seeds over the top for a satisfying crunch.
Serve immediately or let it sit in the fridge for 10 minutes to allow the chia seeds to soften slightly.
