Seared Lean Beef Strips with Garlic Green Beans and Cauliflower Mash
Pan-seared sirloin strips served with garlic-infused green beans and a creamy cauliflower mash, finished with a sprinkle of toasted garlic.
INGREDIENTS
5.5 oz Top Sirloin Steak, sliced into strips
2 cups Cauliflower florets
1.5 cups Fresh Green Beans
2 tsp Olive Oil
2 tbsp Nonfat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a basket over boiling water for 10-12 minutes until very tender.
While cauliflower steams, heat 1 teaspoon of olive oil in a large skillet over medium-high heat.
Add the green beans and half of the minced garlic to the skillet, sautéing for 5-7 minutes until tender-crisp and slightly charred.
Remove green beans from the skillet and set aside.
Add the remaining teaspoon of olive oil to the same skillet and increase heat to high.
Season the beef strips with salt and pepper, then sear in the skillet for 2 minutes per side until browned and cooked to your preference.
Transfer the steamed cauliflower to a bowl or food processor, add the Greek yogurt, and mash or blend until smooth and creamy.
Plate the cauliflower mash, top with the seared beef strips, and serve the garlic green beans on the side.
