Golden Pan-Seared Salmon with Creamy Spinach
Pan-seared salmon fillet with a crispy golden crust served over a bed of velvety creamed spinach infused with garlic and bright lemon.
INGREDIENTS
7 oz Salmon fillet
2 cups Fresh baby spinach
1.5 tbsp Full-fat coconut milk
0.5 tsp Extra virgin olive oil
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 tsp Lemon juice
0.25 tsp Lemon zest
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt, black pepper, and garlic powder.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy and golden.
Carefully flip the salmon and cook for another 2-3 minutes until cooked through to your preference, then remove from the pan and set aside.
In the same pan, add the minced garlic and sauté for 30 seconds until fragrant.
Add the fresh baby spinach to the pan and cook until just wilted, about 1-2 minutes.
Stir in the full-fat coconut milk, lemon juice, and lemon zest, simmering for 1 minute until the sauce thickens and coats the spinach.
Plate the creamy spinach and top with the golden salmon fillet to serve.
