Seared Salmon with Steamed Broccoli and Garlic Cauliflower Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with a side of tender steamed broccoli, finished with a squeeze of zesty lemon.
INGREDIENTS
5.5 oz Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Broccoli Florets
1/4 cup Plain Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10-12 minutes.
In the last 5 minutes of cauliflower steaming, add the broccoli florets to the steamer until they are bright green and tender-crisp.
While vegetables steam, pat the salmon fillet dry with a paper towel and season lightly with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower to a bowl or food processor, add the Greek yogurt and minced garlic, and blend or mash until smooth and creamy.
Serve the seared salmon over the garlic cauliflower mash with the steamed broccoli on the side.
