Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served with garlicky green beans and creamy cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Atlantic Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tsp Extra virgin olive oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until they are very tender, then blend or mash them with salt and pepper until smooth and creamy.
Season the salmon fillet with salt and pepper, then heat a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until golden and cooked through.
Remove the salmon from the pan and add the olive oil, green beans, and minced garlic.
Sauté the beans for 3-5 minutes with a splash of water until they are crisp-tender and the garlic is fragrant.
Serve the seared salmon over a bed of cauliflower mash with the garlic green beans on the side.
