Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet paired with creamy mashed sweet potatoes and garlic-scented green beans, featuring a perfectly crisp skin.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
125g Sweet Potato, peeled and cubed
150g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato and boil in a pot of water until tender, then drain and mash until creamy.
Steam the green beans for about 4 to 5 minutes until they are bright green and tender-crisp.
Pat the salmon fillet dry and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and place the salmon skin-side down.
Sear the salmon for 4 to 5 minutes until the skin is golden and crisp, then flip and cook for 2 more minutes.
Remove the salmon from the pan and quickly sauté the minced garlic and steamed green beans in the remaining oil for one minute.
Serve the seared salmon over the sweet potato mash with the garlic green beans on the side.
