While the pork roasts, combine the dry white rice, water, turmeric, and the remaining sea salt in a small saucepan.
Bring the rice to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed.
Allow the pork to rest for 5 minutes before slicing it into medallions and serving over the golden turmeric rice.
