Seared Lean Beef Strips with Garlic Green Beans and Mashed Cauliflower
Pan-seared sirloin strips served with garlic-infused green beans and a creamy cauliflower mash, finished with a touch of rich grass-fed butter.
INGREDIENTS
5.5 oz Top Sirloin Beef Strips
1.5 cups Green Beans
300g Cauliflower florets
2 tbsp Extra Virgin Olive Oil
1 tbsp Grass-fed Butter
3 cloves Garlic, minced
PREPARATION
Chop the cauliflower into small florets and steam for 10-12 minutes until very tender.
While the cauliflower is steaming, trim the ends of the green beans and mince the garlic cloves.
Heat one tablespoon of olive oil in a large skillet over medium-high heat.
Add the green beans to the skillet and sauté for about 5 minutes, adding the minced garlic in the last 60 seconds to prevent burning.
Remove the green beans and garlic from the skillet and set aside on a plate.
Season the beef strips with a pinch of salt and black pepper.
Add the remaining tablespoon of olive oil to the same skillet and sear the beef strips for 2-3 minutes per side until a golden crust forms.
Drain any excess water from the steamed cauliflower and transfer it to a bowl or food processor.
Mash or blend the cauliflower with the grass-fed butter and a pinch of salt until smooth and creamy.
Plate the seared beef strips alongside the garlic green beans and a generous portion of mashed cauliflower.
