Remove the bacon from the pan, let it cool slightly, and then chop it into bite-sized pieces.
In the same skillet, add the remaining olive oil and sauté the cubed sweet potato for 6-8 minutes until tender and slightly browned.
Add the baby spinach to the skillet and stir for 1 minute until just wilted, then remove from heat.
In a medium mixing bowl, whisk together the eggs, egg whites, nutritional yeast, sea salt, and black pepper until the mixture is frothy.
Spread the sautéed sweet potatoes, spinach, and chopped bacon evenly across the bottom of the prepared baking dish.
Pour the egg mixture over the ingredients and bake for 18-22 minutes, or until the center is firm and the top is beautifully golden.
