PREPARATION
Mash half of the banana in a medium bowl until a smooth paste forms.
Add the egg, egg whites, vanilla protein powder, almond flour, baking powder, cinnamon, and sea salt to the bowl and whisk until well combined.
Slice the remaining half of the banana into thin coins.
Heat a large non-stick skillet over medium-low heat and lightly grease with the coconut oil.
Pour the batter into the skillet to create three or four small pancakes.
Press the banana slices into the top of each wet pancake.
Cook for 3 to 4 minutes until the edges are set, then flip to sear the banana side.
