Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served over creamy garlic-infused cauliflower mash with a side of crisp-tender steamed green beans.
INGREDIENTS
7 oz Wild Salmon Fillet
2.5 cups Cauliflower florets
1 cup Green beans
1 tsp Avocado oil
1 tsp Extra virgin olive oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets and green beans in a steamer basket over boiling water until tender, about 8-10 minutes.
Remove the green beans and set aside, then transfer the steamed cauliflower to a food processor.
Add the olive oil and minced garlic to the food processor and blend until the cauliflower is smooth and creamy, seasoning with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked to your preference.
Plate the salmon over a generous bed of the garlic cauliflower mash and serve with the steamed green beans on the side.
