Preheat your oven to 375°F (190°C) and line a small baking dish or loaf pan with parchment paper.
Finely dice the yellow onion and mince the garlic clove.
In a medium mixing bowl, combine the ground beef, egg, almond flour, diced onion, minced garlic, smoked paprika, sea salt, and black pepper.
Gently mix the ingredients by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a compact loaf and place it in the prepared baking dish.
Lay the bacon slices over the top of the loaf, tucking the ends underneath if necessary.
Spread 1 tablespoon of the sugar-free BBQ sauce evenly over the bacon.
Bake for 30 minutes, then remove from the oven and brush the remaining tablespoon of BBQ sauce over the top.
Return to the oven for another 5-10 minutes, or until the internal temperature reaches 160°F and the bacon is crispy.
Allow the meatloaf to rest for 5 minutes before slicing and serving.
