Zesty Cajun Shrimp Quesadillas
Sautéed Cajun shrimp and crisp bell peppers are folded into a toasted tortilla with melted sharp cheddar for a smoky, zesty finish.
INGREDIENTS
7 oz Shrimp
1 medium Whole wheat tortilla
0.5 oz Sharp cheddar cheese
0.5 cup Bell peppers
0.25 cup Red onion
0.5 tbsp Extra virgin olive oil
1 tsp Cajun seasoning
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh cilantro
0.5 medium Lime
PREPARATION
Pat the shrimp completely dry with a paper towel and toss in a small bowl with the Cajun seasoning, sea salt, and black pepper.
Heat half of the olive oil in a large non-stick skillet over medium-high heat and sauté the sliced bell peppers and red onions until tender-crisp and slightly charred.
Push the vegetables to the side, add the remaining olive oil, and sear the shrimp for 2-3 minutes until they are pink, opaque, and fully cooked.
Transfer the shrimp and vegetable mixture to a plate and wipe the skillet clean.
Place the tortilla in the skillet over medium heat, then sprinkle the shredded cheddar cheese over one half of the tortilla.
Layer the shrimp and vegetable mixture over the cheese and fold the tortilla in half.
Toast for approximately 2 minutes per side until the tortilla is golden brown and the cheese is completely melted.
Remove from the heat, slice into wedges, and serve with a squeeze of fresh lime juice and a sprinkle of chopped cilantro.
