Preheat your oven to 400°F (200°C).
Scrub the potato thoroughly, prick it several times with a fork, rub with olive oil and half of the sea salt, then bake directly on the oven rack for 45-50 minutes until soft.
While the potato is baking, cook the turkey bacon in a small skillet over medium heat until crispy, then remove and crumble into bits.
In the same skillet, add the ground turkey and season with garlic powder, black pepper, and the remaining sea salt, cooking until browned and fully cooked through.
Once the potato is finished, slice it open lengthwise and use a fork to fluff the inside flesh.
Stir the plain Greek yogurt into the fluffed potato until the texture is creamy and well combined.
Pile the cooked ground turkey into the potato, sprinkle with shredded sharp cheddar cheese, and top with the crispy bacon bits.
Place the potato back in the oven for 2-3 minutes until the cheese is melted and bubbly.
Garnish with freshly chopped chives and serve immediately.
